Classic Caterer’s Chilli Chow-down Champion Recipe

6 Large white onions finely chopped
5 Kgs lean minced beef
1 Kg ground pork
125 ml olive or canola oil
2 Tbs minced garlic
10 Chopped Jalapeno chillis (5 Habanero chillis for the BRAVE)
250 g can tomato paste
500 g whole tomatoes skinned and finely diced
1 Tbs cumin powder
1 Tsp salt
1 Tsp oregano
1 Tbs mustard powder or paste
2 shot glasses of good Tequila
340 ml beer or stout
5 heaped Tbs strong chilli powder (this is a feel thing, so add more if needed)
500 ml beef stock

Place all ingredients into a large pot and simmer for 3 hours stirring occasionally.

Serves 25 comfortably

Tip: If some of your guests are not partial to very spicy dishes, dispense enough for them into a separate pot and them add the chilli powder to your main pot.
