Anaheim and Bacon Frittata Recipe

Ingredients
6 Thin rashers of streaky bacon
1 Anaheim Chilli, seeded and coarsely chopped
3 Spring onions
8 Eggs
4 Tablespoons of milk
Salt and pepper

Method
Preheat oven to 230 °C
Fry the bacon in an oven proof frying pan until crisp and then remove from the pan.
Add the chopped Anaheim and the spring onions, saute until softened.
Lower the heat, crumble the bacon and add to the pan.
Break the eggs into a bowl and beat briefly with the milk.
Pour into the pan and mix quickly with the chilli, Onions and bacon.
Cook over a low heat until the Frittata is firm most of the way through.
Add salt and pepper to taste.
Place into the oven for 3 to 5 minutes to finish cooking.
Cut into wedges and serve.
